<p>東京的「寿司の美登利」非常有高人氣，很多台灣人去東京旅遊大都會安排去這家很多人稱讚 CP值高的壽司店，在東京有幾家不同類型的連鎖店，最近也來台灣展店，台北大安第一號店近期開幕果然吸引很多慕名的人潮，尤其現在因為疫情關係不能去日本，大家都希望可以在台灣店吃個美味壽司彌補一下無法去日本的惆悵。</p>

<p>「壽司美登利 (寿司の美登利)」台北大安店就在忠孝東路四段跟大安路口，Bistro 98大樓後面，以前 嚕嚕米主題餐廳 Moomin Cafe 的原本位置。</p>



<p>台灣的「壽司美登利」跟香港的店一樣以 FC 型態經營的特許加盟店（Franchise Chain），由「屯京拉麵」、「鰻重總本家」等日系餐飲品牌的台灣福代克思引進台灣，這家店的老闆跟演藝圈人士熟識，所以開店前就看到安排一些有名演藝人員先行造訪宣傳。</p>



<p>由於非直營店而是特許加盟店所以我對於日後的經營其實是有點擔憂的，很多日本來台灣的店最後都被玩死，不過「屯京拉麵」也經營很久感覺算是維持的不差，所以希望這個擔憂是多餘的。</p>

<p>目前還無法提前線上訂位，僅開放當日現場候位，但不需要在門口排隊，門口有QR CODE 掃了之後就可以登記候位，然後會發一個簡訊給你，點簡訊裡的連結就可以看到前面候位還有幾組，如果還要好幾組可以先到處逛逛，快輪到的時候會電話通知。如果是座位已滿的狀況，店員表示一小時最多可消化約20組。</p>

<p>本來以為有了上面的候位連結就可以當日9點先登記（剛剛看好像改為10點開始），後來試了發現此服務會先取用你的位置，需要跟餐廳位置距離一公里以內的才允許登記候位。這也就是可以找住附近的人幫忙先登記候位 XD。</p>

<p>門口有菜單可以先看看要吃什麼，大部分的人應該先點左邊的套餐。</p>

<p>最多人點的應該是 850 元的『超級特選握壽司拼盤』套餐 ，初次造訪我們也都是點這個，以後再看喜歡什麼再單點。</p>

<p>另外售價 500 元的『鮭魚鮮蝦海鮮拼盤』是台灣限定的，看準台灣人最愛點鮭魚跟蝦，套餐有炙燒起司鮭魚、生鮭魚、炙燒鮭魚、天使紅蝦、牡丹蝦、大熟蝦、炙燒起司熟蝦、酪梨熟蝦共 8 貫握壽司。本來我也想點這個，但看到有好幾貫壽司上面有淋上一些我不喜歡的醬，所以就放棄點這個了。</p>

<p>店內桌位看起來蠻多的，約有20多個 2 人與 4 人座位，而吧台共也有約10多個位置。</p>

<p>大部分握壽司的師傅應該都是台灣人，前面有一位是日本師傅，不過這位日本師傅主要是在安排每個套餐的食材。</p>

<p>這家壽司店不是迴轉壽司，每個座席皆有平板可點餐，平板點餐共分為壽司與酒類 2 大類，壽司有單點價格從 80~200 元不等，或套餐。</p>

<p>桌位上只有醬油及醃薑，醬油是日本「寿司の美登利」特製的壽司醬油．因為不是迴轉壽司所以茶是服務人員送來的，如果要再加茶就從平板上按需求。</p>

<p>現在用餐每個人都會送味噌湯，喝完還可以續，但不確定之後還有沒有。</p>

<p>『超級特選握壽司拼盤』有含茶碗蒸及『小碗蟹膏沙拉』，茶碗蒸裡的香菇很香，蟹膏沙拉的蟹膏沾蟹肉也好吃。</p>

<p>『超級特選握壽司拼盤』是精選食材特製的壽司拼盤，共有：鮪魚中腹、鮭魚、星鰻、天使紅蝦、帆立貝、真鯛、紅甘握壽司，以及鮭魚卵軍艦壽司、海膽軍艦壽司、蔥鮪手捲壽司、玉子燒 2個。吃起來對一般食量的人還蠻有飽足感的。</p>

<p>這裡面最突出最吸引目光的應該就是星鰻握壽司，星鰻超級大吃起來非常過癮．</p>

<p>「寿司の美登利」最讓人吃來過癮的就是握壽司上面的生魚片特大，一定遠遠超出下面的米飯團，不僅視覺效果好而且會感覺CP值超高．</p>

<p>台灣的「壽司美登利」不像一樣最近開幕來自日本的金澤美味壽司那樣強調海鮮食材產地來源，雖然據媒體報導大部分的食材約有 90% 左右來自日本，但是像是海膽這類的海產可能會來自美國、俄羅斯等地，我猜想他的食材來源只要符合要求依據狀況而有所變動．這次吃的大部分海鮮都算品質不錯好吃，不過像海膽等部分食材會感覺比較普通一點．</p>

<p>因為跟一樣從日本來台的金澤美味壽司開幕時間差不多所以應該很多人會做比較，我個人覺得 sogo 忠孝館的金澤美味壽司新開幕到8月底有優惠的金澤百萬石套餐最划算，如果二家壽司店都要去，8月底前先去吃金澤美味壽司點金澤百萬石套餐，反正美登利的套餐沒有特別優惠隨時去都可以。</p>

<p>這家100円迴轉壽司店是日本蠻大的連鎖店，在日本各地幾乎都有店面，京都市區也有幾家，我們去的這一家二条店就在二条站旁邊而已，雖然不在市中心但交通很便利，吃完壽司旁邊還有一家百円商店可以逛喔。</p>
<p>以前在京都想吃便宜的迴轉壽司時會去京都車站旁的一家迴轉壽司店(忘記名字了)，或是河原町三条的かっぱ寿司 (河童壽司)，這二家店都很不錯便宜又好吃，也都很有人氣，京都的朋友也很稱讚，但不知為何這二家店都關店了。所以現在只好坐地鐵到遠一點的地方吃便宜的迴轉壽司了。</p>

<p>くら寿司桌位雖然不少但人氣很旺，還好我們很早就來所以不需要排隊，我們吃完離開時排隊候餐的人可是非常的多。</p>

<p>一般壽司一盤都是100円(未稅)，那時候還是5%的稅現在已經是8%了阿。</p>

<p>除了一般經常性的魚類壽司外針對季節有特別的壽司推出，此外還有炸天婦羅、海鮮丼、拉麵…等餐點非常多樣，很適合全家大小一起來用餐各自點選自己想吃的料理，不過這些餐點的價格就不會是100円囉。</p>

<p>這裡熱茶用的是我喜歡的粉末綠茶，最近發現日本的迴轉壽司好像蠻多都使用這種綠茶粉，沖泡起來感覺綠茶的味道比較重。</p>

<p>可以直接從迴轉帶上取出壽司來食用，拿取盤子時上面的蓋子會自動掀開 (桌位前有圖片教學怎麼使用)，據說這是日本第一個這麼做的迴轉壽司店，上面的蓋子是用來保持壽司的鮮度的。</p>

<p>另外每個桌位上也有一台點餐用的iPad，圖形化的介面操作很簡單，可以很清楚看到壽司的照片，對我們這種不認識日文怕點錯的人真的很方便。</p>

<p>點的餐會用另一條輸送帶送到桌位前，來的時候iPad螢幕會發生聲音提醒，別桌點的餐點會直接呼嘯過去，感覺好先進好方便。</p>

<p>這家店最有趣好玩的是把吃完壽司的盤子放進這個洞裡，只要放進5個就可以玩遊戲，螢幕會開始播出抽獎的遊戲畫面，贏的可以獲得上面的扭蛋一個，我們吃了15盤玩了3次只有一次有中，得到了一個小小的壽司吊飾。</p>

<p>從忠孝東路彎進往松山菸廠的巷子裡後，在近巷子底時才會發現在右手邊低調的茗荷，店開在這種地段大概都是主推熟客或是有人推薦的客人，一般路過客人應該不太可能。</p>

<p>店裡的座位主要就在ㄩ型吧檯，大約可以提供十多個板前座位，另外靠窗有一個四人的獨立桌子。</p>

<p>一入座後師傅問有無不吃的食材，因為我們都沒有特別不吃的，所以就全權委請師傅處理，我們就吃就好了。</p>

<p>現磨的山葵、漬物有薑片及蘿蔔，很多店的醃薑片的酸味都太嗆了所以通常我都不太吃，後來夾了一片品嚐這裡的醃薑片比較溫和一點，清脆微酸的淺漬蘿蔔也有開胃的效果。</p>

<p>首先送上來的開胃料理是沖繩的海藻，加上山藥梅泥與碎黃瓜，略酸的調味真的很開胃。</p>

<p>蝦蛄足軍艦壽司，這道的蝦蛄足是非常費工的，要從細小的蝦姑前足中把蝦蛄肉弄出來外，肉中間的透明骨架也要處理乾淨，上菜之前看師傅拿個小工具在哪處理好久阿，姑且不論新鮮蝦蛄肉如何鮮美，單就如此得來不易費工的程度就夠令人充分感受到其美好。</p>

<p>菇、篿菜煮魚，這道的魚肉據說是沒有中文名稱的，台語叫做「三齒」，跟黃魚同類吃來肉質纖細。表面覆着透明黏膜的篿菜台灣地區不多見，據說目前只有宜蘭地區有種植，口感獨特味道清淡，我在日本曾吃過只覺得稀奇倒也不覺得如何美味。</p>

<p>天婦羅，除了有當令旬菜筊白筍、地瓜、還有日文名為しし唐辛子（獅子唐辛子）的綠辣椒，據師傅說是因為尖端看起來像獅子而名之，綠色外皮比一般台灣吃到的綠辣椒薄，因為太薄所以感覺吃起來蠻虛的，味道頗微妙的，不過他的營養價值豐富可增強免疫功能及恢復疲勞，是作為應付夏季熱疲勞的好食材。</p>
<p>另外照片左下角的是大徳寺麩，這種生麩是師傅自己做的，吃起來有點像麻糬的口感味道則是稍微甜甜的。</p>

<p>哈密瓜雪泡，有點像水羊羹，作法是在快凝結的時候把泡泡打進去，不過我對甜食苦手，這種日式甜食對我而言太甜了，通常我需要坐在茶館配個熱茶細細品嘗好一段時間才能消化。</p>

<p>迴轉壽司店就算不是在日本而是台北也已經是非常普遍的餐廳，   <br />在日本除了可以平價吃到好吃的壽司外很多迴轉壽司店還發明了很多噱頭來招攬顧客，    <br />除了現宰大鮪魚秀外、還有結合遊戲的點菜、扭蛋….等，    <br />而發明迴轉壽司的是在大阪的「<a href="http://www.mawaru-genrokuzusi.co.jp/index.html" target="_blank">元祿壽司</a>」創社者白石義明先生，    <br />他從朝日啤酒廠的啤酒瓶運輸帶得到靈感將其引用到壽司店中。</p>

<p><a href="http://www.mawaru-genrokuzusi.co.jp/index.html" target="_blank">元祿壽司</a>目前的店主要位於日本關西大阪一帶，    <br />而其中我光顧過的店是在難波站附近的<a href="http://www.mawaru-genrokuzusi.co.jp/tenpo/sennichimae/sennitimae.htm" target="_blank">千日前店</a>。    <br />這一趟日本行因為回程的航班是比較早的所以最後一晚選擇住在難波附近的商務旅館，    <br />這樣隔天一早要去關西機場比較方便，    <br />在難波在找尋晚餐時再度造訪這一家迴轉壽司店，    <br />從第一次去到今年再度光顧已經過好幾年，    <br />美味平價的印象一如當時。</p>
<p>其實我對我吃過的日本這些平價一皿100円或130円的迴轉壽司店都很有好感，   <br />因為日本的迴轉壽司大概競爭非常激烈，    <br />所以只要是大型連鎖店或是看起來顧客很多的店通常品質都還不錯，    <br />生魚片的新鮮度跟份量都頗令人滿意的。</p>
<p>一皿100円或130円的價位其實跟台灣差不多，   <br /> (以之前的匯率看，不過就算是現在的匯率如果再考慮日本的所得其實應該是比台灣便宜)    <br />但是每一個握壽司上面的魚片份量絕對是很大一片決不小氣，    <br />另味一個我對台灣迴轉壽司店最不滿的地方是：    <br />說是握壽司但是台灣的師傅根本就是只是把魚片蓋上去而已，    <br />飯跟魚片完全是分離的，常常不得以魚片跟飯只好分別就食根本不是吃握壽司阿。    <br />而這裡的迴轉壽司就算是如此平價，師傅還是手捏握壽司，    <br />夾起來時魚片跟米飯絕對不會分道揚鑣。    <br />我可以接受用機器先捏好一份份的米飯，    <br />但在店製作成握壽司前最起碼要將生魚片跟飯糰握捏一下阿。</p>

<p>迴轉壽司店的茶也是一種重點，   <br />不是使用無味的茶包給客人泡就可，    <br />日本很多店提供的煎茶都還不賴，    <br />我最喜歡這種提供煎茶粉的，泡起來的茶比較香濃。</p>

<p>PS   <br />會想寫這一篇食記大概是因為前幾天去了就沒去的迴轉壽司店，    <br />有感而發，    <br />我發現不知從何開始我來這家店就只剩下鮭魚握壽司是我會吃的了。    <br />當然台灣也有還不錯的迴轉壽司店，    <br />但其價位說實在的不能算是親民，    <br />我一直覺得迴轉壽司應該是平價的庶民餐廳阿。</p>

<p>跟一般的迴轉壽司一樣依照盤子的顏色算錢，   <br />最便宜的綠色盤子40元不過很少而且都是一般我不會點的，    <br />三月底之前還有白盤子優惠50元，    <br />今天點的炸蝦壽司就是白盤子感覺是有便宜到。</p>

<p>我覺得這裡最大的噱頭是提供生山葵及岩鹽給顧客自行研磨，   <br />雖然感覺很好玩可是山葵我磨了好久才磨出一點點阿，    <br />還是去丸壽司直接跟師父要比較方便。</p>

<p>這裡的價位感覺跟丸壽司差不多，   <br />不過食材跟份量我覺得略遜，    <br />像這個鮮蝦沙拉跟丸壽司的海鮮沙拉差不多價位，    <br />但是這一盤小很多阿。</p>
<p>食材的部分有可能剛好是我的運氣差，   <br />因為隔壁一位一直跟日本壽司師傅聊天的常客他點的魚就看起來不錯。</p>
<p>中與志是各大百貨超市有名的海產販售商中島海產的店，   <br />海鮮食材應該是很有優勢的，    <br />不過原本他們標榜日本直送的海產我想被這時候日本核災影響很大，    <br />而且顧客也零零落落的不像以前看到的。</p>
