<p>上次去美福買牛肉時除了<a href="http://emma0319.tw/archives/2010/09/10090524.html" target="_blank">做燒肉的極黑和牛雪花牛</a>外還買了牛排肉，    <br />今天在家拿來煎了牛排享用一邊等待颱風的來襲。</p>

<p>這次煎牛排的方法是前一陣子在新聞網看到名廚鄧有癸教的方法，   <br />使用的鍋子是Le Creuset橫紋烤盤。</p>
<p>首先把牛排單面用一些鹽和胡椒調味，   <br />鍋子熱鍋後我用從牛排切下來的油花取代油入鍋，    <br />接著把牛排二面大約各煎一分鐘(可是喜歡的熟度調整)，    <br />然後把牛排取出來單面抹上油靜置約三分鐘，    <br />這個動作的作用是要讓牛排表面的熱度透過油傳導入內將肉汁封在裡面，    <br />把牛排從鍋子裡取出是為了避免肉表面煎太熟了。    <br />最後再將牛排入鍋二面各煎個幾十秒就好了。</p>

<p>牛排只要沾些現磨的玫瑰岩鹽及黑胡椒就很好吃。</p>
<p>配菜是我蠻喜歡的微風超市賣的現成小菜。</p>
